Broccoli & pine nut pesto penne | Sainsbury`s Magazine

Seriously, California — you win. Roger grilled a mouth-watering tri-tip, and Melissa served up this delicious broccoli, pasta dish.

She used gluten free pasta, and I took one bite and knew that I could eat the entire serving bowl of it. Seriously: The flavor!! Such a perfect blend of lemon, butter, garlic, a little salt from the parmesan…and — toasted pine nuts!? Words cannot do this one justice. I asked Melissa for the recipe, which she credited to a book by the amazing Barefoot Contessa.

Then, soon after Jonah and I returned home to Hawaii, I had to make it for my family. Everyone loved it. Levi even ate the broccoli without complaints. Also, the little bit that was left made for delicious leftovers — served heated up or cold, mixed with salad greens my favorite because the sauce is so close to a salad dressing!

And because I knew you would like it too, I had to share the recipe here. Hugs and kisses. Please feel loved. Cook the broccoli for minutes in a large pot of boiling, salted water.

Was a bit sceptical if F would dig it, considering the minimal ingredients. But surprise, surprise! We ended up head over heels for it! Being a food blogger, I must showcase recipes from different cultures with genuine respect.

I aim to make dishes popular without losing their original essence, just like I did with Horaa Osbao. Excited to share garlic and olive oil spaghetti with you all, hoping it steals your heart just like it did for us!

For the perfect Spaghetti Aglio e Olio, the key is toasting garlic just right—too short, it's raw; too long, it's burnt. Start with room-temperature oil in a cold pan skip preheating.

Add thinly sliced garlic to the room-temp oil in a room-temp pan. Cook on low flame until golden. Toss in chilli flakes and pine nuts, and cook till golden. Switch off, pour over drained pasta, or mix pasta with sauce and parsley.

Toss, serve, and enjoy! Throw the spaghetti into a big pot of boiling, salty water, following the packet instructions. Let it do its thing while we kick off the sauce action. No need to crank up the heat just yet! Grab a shallow skillet, toss in the olive oil and sliced garlic.

Pop it on the stove, but keep on low heat. Let the garlic work its magic and transform into a lovely light golden hue. Sprinkle in those chilli flakes and toss in the pine nuts.

Keep the low-heat going until the garlic and nuts hit that golden-brown sweet spot. Once the spaghetti is cooked al dente or fully cooked, transfer it directly from the pot to the skillet using a tong or spaghetti spoon. Sprinkle with chopped fresh parsley for a burst of color and freshness.

Toss the pasta ensuring every strand is coated. If it feels a bit dry, add some of the pasta water to create a silky sauce. Serve immediately topped with some grated Parmesan cheese. Cooking spaghetti can be a breeze if you stick to the instructions on the pack.

Yet, let's be real — we all forget to keep an eye on the clock. Instead of resorting to the "let me taste it" method, here's a nifty trick: fish out a strand of spaghetti and give it a snip. If you spot a thick white dot in the centre, it's not quite there yet, so let it keep boiling.

Once that dot disappears, you've hit the sweet spot of perfectly cooked spaghetti. Spaghetti Aglio e Olio is best enjoyed fresh and hot, but if you end up with leftovers or want to prep ahead, here is what I recommend:.

Refrigeration : Pop any leftovers in an airtight container and store them in the fridge. Consume within days for the best flavor. Reheating : When it's time to indulge again, gently reheat on the stove or in the microwave.

Add a splash of water or olive oil to maintain that silky texture. While you can technically freeze pasta, the texture might not be as perfect upon thawing.

I also sprinkled in chile flakes. I used 1. It was silky and so flavorful. Superb as written! One suggestion from a guest would be to serve the extra pasta water on the table for those who want a saucier dish. Will make again. Everyone at the table was in awe!

What a great clean out your refrigerator pasta—few strips of bacon, peppers, onions, herbs, chili crisp, etc. Used just enough lemon to brighten.

Like the addition of arugula. Had a bit of grilled salmon I added to the top of my serving bowl. Cook bacon until done but not crisp 2. Toast pine nuts and garlic in bacon grease 3. The general idea with a recipe like this is to taste constantly, aiming for balance of richness, acidity, salty, and herbiness. But keep in mind that the heat of the pasta will mute the lemon.

Finally, use plenty of pasta water until the sauce is truly luxurious; don't let it get too dry. Adapted from Cook with Jamie.

In a medium bowl, smash half the pine nuts to a paste. Add the remaining pine nuts whole, along with the lemon zest, parsley, olive oil, and cheeses. Add in lemon juice to taste, aiming for a tarter-than-you'd think flavor the lemon will be muted once it's mixed with the pasta.

Meanwhile, bring a large pot of salted water to boil. Cook the pasta until al dente, reserving at least a cup of cooking water before draining.

Return the pasta to the pot and scrape the sauce into the pot. Add in a splash of pasta cooking water and toss the noodles well with tongs to coat them in the sauce. Aim for a luxurious consistency wetter than you'd think; as much as a cup of cooking water might be required.

Season to taste with salt and pepper while still in the pot. Divide the pasta amongst 4 plates and top with the whole parsley leaves. Serve immediately. Use limited data to select advertising. Create profiles for personalised advertising.
